Copying PARTS from one STYLE into another

A keyboard acquaintance of mine, Michael Clark, who for most of his life has sung and played at clubs 'up north' recorded this version of Over the Rainbow for me.

What has struck me is that when you sing you don't have to play the melody .. which leaves both hands free to play an accompaniment.  Michael plays a Tyros 2.

This is true, I don't sing but my keyboard can. I'm just re-learning to play (and everything else), but I've been watching videos and doing exercises from The Keys Coach on YouTube hoping to be able to do something like this in the future. To let the keyboard sing while I play behind it. Possibly some multitracking there too. Previously it was melody in right hand, chords/styles in left, but I want to do it differently this time around, play more and use more of the the keyboard features.
I'm finding the exercises he gives are suiting me. I can understand what he wants us to achieve, still using chords, but differently. It'll be slow going but I will enjoy the journey with your tutorials and YT.... and much practise.
